It is thought that she was afraid of getting herself hurt again, as well as the people she cared for the most. 
Kyoko is often seen eating apples because it serves as a symbol of her difficult past, where she and her family faced extreme poverty and near starvation. This lead her to deeply value food and dislike waste, with apples representing a readily available source when times are tough.
